What is a Vinaigrette?

A vinaigrette is the simplest of salad dressings. Basically, it’s just a mixture of seasoned oil and vinegar or citrus juice. And that’s it! It’s basic requirements allow for a lot of wiggle room, meaning you can make a range of vinaigrettes in a variety of flavors with the same cannabis-infused olive oil. What is Decarboxylation?

Decarboxylation is the process of inducing a chemical reaction. It removes a carboxyl group and transforms raw phytocannabinoids (amazingly healthy in their own right) into the cannabinoids you know and love so much, like THC and CBD.

Basic Medicated Vinaigrette for Cannabis Salad

  • First, ½ Cup Extra-Virgin Olive Oil or Vegetable Oil
  • Second, ¼ cup Cannabis Olive Oil
  • Third, ¼ Cup vinegar or other acid (squeezed lemon juice or lime juice)
    *I prefer apple cider vinegar

Flavoring ingredients, such as mustard, hot sauce, Worcestershire sauce, sesame oil, walnut oil, and grated ginger, are perfect opportunities to make this salad your own. If you prefer a touch of sweetness, add stevia, honey, agave or maple syrup.

Italian Parmesan Vinaigrette

  • 1- ¾ cup extra-virgin olive oil
  • 2- ¼ cup cannabis olive oil
  • 3- ¼ cup red wine vinegar
  • 4- 2 tablespoons grated Parmesan cheese
  • 5- 2 teaspoons Dijon Mustard
  • 6- 1 teaspoon dried parsley
  • 7- 1 teaspoon minced garlic
  • 8- ¼ teaspoon sugar
  • 9- pinch of salt
  • 10- ground black pepper

First, combine all spices with cheese in a small bowl. In a medium sized bowl, whisk together all wet ingredients. Then, slowly add in dry ingredients, stirring to avoid a grainy texture. Store in a jar in the fridge to keep fresh. This vinaigrette pairs well with tomato, spinach, kale, salmon, zucchini. Think Mediterranean!

Likewise, this vinaigrette can be a nice topping for other Italian dishes, not just a cannabis salad. Think of it as a dipper or drizzle for pizza, or as a sauce for a seafood pasta – delicious!

Lemon Vinaigrette

  • Add ¾ cup extra-virgin olive oil
  • Next add ¼ cup cannabis olive oil
  • Add ¼ cup freshly squeezed lemon juice
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • ¼ teaspoon honey

Combine all ingredients in a medium bowl and store in a jar in the fridge. This dressing works beautifully with chicken and fish. Or, use it on a fresh cannabis salad with blueberries, walnuts, pear, spinach, red onions or leeks, mushrooms, and blue cheese or brie. Also, if you want to get maximum health, you can lightly grill your mushrooms but keep your onions raw.

Similarly, a cannabis salad with fresh strawberries, goat’s cheese, almonds, and avocado is an excellent way to use this bright vinaigrette in a ultra-healthy meal.

Experiment with your ingredients. Watermelon, pomegranate, nuts, seeds, citrus fruit, prawns – the world is your oyster! At the same time, cannabis can be a strong flavor so it may take some experimentation to find the best ratios and combinations to suit your taste buds.
